Story of my childhood mum!


Thai Red Curry

Here's my Thai Red Curry recipe as an idea for your dinner part on Saturday.

It's yum!

The way I do it is... (it's v quick n easy)

Buy from Sainsburys some stir fry vege like this:


and add anything suitable - red peppers, mange tout, an onion or two, small longways carrots, those cute little baby sweetcorns, spring onions, maybe even mushrooms if you're feeling wild... but not the silly button ones, get fancy ones. (Not potato) For lots of people it's probably cheaper to just buy them all separately, not in a stir fry pack - you could look in the stir fry packs and see what they've got for ideas of what to include.

Fry them all up nice and good. Add some ginger and fresh coriander and KING SIZE prawns (yum)

Then add some Thai RED curry paste:


(not the green one)

And then add some chopped tomatoes and some creamed coconut:


Simmer until it's a nice consistency and serve with white rice.

What do you reckon? It's really tasty. I don't see why it wouldn't work for large numbers, just need to put lots of each ingredient in...! And it freezes yum.

Garden!!

Copenhagen

Quick post about my recent trip to Denmark. I know I already told you about it, but here are a few photos.

I think this is one of the parliamentary buildings, but I can't be sure!





There were all these young people about wearing funny hats, looking really pleased with themselves and it took us a long time to realise that they're students who'd just finished secondary school. They all drove around the streets in these vans making lots of noise and people would cheer. Nice tradition! Nora had previously told me that they do this in Sweden as well.



This is the entrance to the self-ruled town I told you about. It was quite like Camden inside, but quite small. Strong smell of weed!





Oh and we did actually go to the conference too... MASCC - Multinational Association of Supportive Care in Cancer where we presented the preliminary electrochemotherapy stats for the South West.
